To sharpen KAI knives according to Japanese art, we recommend a set of ceramic sharpening stones.
AP-0305 KAI stone has two combinations of 400/1000 grit.

Sharpening Guide:

Before using the whetstone, leave it to soak in water for about 10 minutes. When sharpening, there should always be a thin layer of water on the surface of the stone. This serves to sufficiently cool the cutting edge.



Symmetrical sharpening blades

to. Place one side of the blade on the whetstone.
b. Start sharpening from the tip. Pass the knife on the whetstone at an angle of about 15 ° on the whetstone by pressing lightly in the direction of the thread and releasing on the return. Repeat these steps until you feel a slight burr.
c. Turn the knife and sharpen the other side of the blade as described above. Be careful to sharpen the blade with the same number of passes on both sides. To obtain a symmetrical sharpening it is important to maintain a constant angle between the stone and the blade.
d. Rinse the knife and whetstone with plenty of hot water.



Blades with asymmetrical sharpening

to. Place the sharp side of the blade on the whetstone.
b. Start sharpening from the tip. Pass the knife over the whetstone at an angle of about 45 ° on the whetstone, pressing in the direction of the thread and releasing the pressure on the return. Repeat these steps until you feel a slight burr.
c. Turn the knife. Place the concave side of the blade on the whetstone and sharpen this side, but only 1/10 of the way through the opposite side.
d. Rinse the knife and whetstone with plenty of hot water.
